This is a classic Thai red coconut curry base with lots of veggies and big chunks of local rockfish. We infuse lemongrass and kaffir lime leaves for a depth of flavour. It is delicious on its own, but you can also serve with rice or noodles for a full meal.

Ingredients: local rockfish, green cabbage, carrots, red pepper, celery, ginger, shallots, garlic, red Thai curry paste (* may contain shellfish), coconut milk, zucchini relish, lemongrass and kaffir lime leaf infusion
